Food

1. tuna with peas, corn and cilantro on pita crackers

2. egg salad, spinach and quinoa on toast

lunch time is fun and interesting. dinner not so much. why? well, i prepare lunch for the kids and myself and i'm more free to eat anything. with dinner, i cook for the lovely hubby who's picky. i know i can venture out and try new stuff with the lovely but i get lazy. to his credit, he has been venturing out a little more :)

i love quinoa... they should make shirts with that slogan. the great thing about quinoa is the ability to put it in anything! it's good, healthy protein.

Food


I often crave homemade hummus and homemade pita chips. For awhile, I was making hummus whenever the previous batch ran out! I had to cut back just a tad bit. We usually pair ours with broccoli and bell peppers, yum!

Food





The first two were for lunch, since my picky husband won't eat tofu or sushi (boring!). I've been craving sushi every day! I made a salmon sashimi poke bowl which turned out tasty. I'm looking forward to making it again.

Tried to copy Chipotle's tofu dish. Not as good, but it satisfied and was healthy! I've made it twice since.

I breaded the tilapia which I won't do next time. PJ wasn't a fan of the breading either. But it was pretty good when right off the grill.

The shrimp and grits were amazing in New Orleans. When PJ and I talk about the dish we tried there, we salivate! So, I took a stab at it! Pretty good but there's something about the New Orleans dish that was amazing! Ooh, maybe it was bacon :)

The Tibayan clan is on their two week vacation!!! We are excited and want to do everything, and do nothing at the exact same time...How does that work?!

Breakfast for Dinner

This always reminds me of the East Coast. When we were there, we had a family invite us over for dinner, and she kindly served eggs, scones, and bacon. I was happy to eat it, but it did catch me by surprise. 

This week I didn't know what to make for dinner. I looked in the pantry, because that's where you look for obscure food, right? I found a box of pancake mix, pulled out the old waffle maker, and surprised the kids with waffles for dinner! They were so happy, that it made me happy! 

More waffle dinners please :)

Juicy...

Burger. PJ and I like good burgers. We try to find new spots that make us salivate when we hear their names.

PJ and I have a few on our list (8 oz., The Apple Pan). Some are chains, some are unique spots. Juicy Burger is one of my favorite burger chain spot. It's very yummy, but not the best. It sure is juicy though. I have yet to try an amazing mushroom burger! The closest is Red Robin, but there's gotta be a better one somewhere out there!

Chicken Mango Curry



Chicken (1lb)
Bell peppers (2-3)
1 Big mango (very ripe)
Salt, garlic salt, and Knorr chicken bouillon

Cut up chicken, mango and bell peppers together in bowl and season to liking . Pour olive oil in sauce pan and mix chicken ingredients. Cover with lid, watch and stir occasionally. Should begin to look like a curry. Cook until chicken is done and bell peppers are soft.

Eat with brown rice and enjoy!

Food Truck Memories

I like cheese. I like grilled cheese sandwiches. Did you know IN-N-Out has grilled cheese sandwiches? I digress. I like food trucks. Good food trucks. 

I recently tried the Indian food truck here in L.A. at the Art Cycle a few months back and it was good! 

We joined RC and Aimee (during the summer) on their food truck adventure in Hawthorne.

 I liked their unique twist to the old timer--freshly made chilly, Fritos, and cheese! Yum!
 I didn't order this but I tasted it. Yummy! I can't remember the name of the food truck :(
OH, so good but so bad :( My Tornado Potato)
 It was ok but I think I should have ordered the way they recommended (Ice Cream Sandwich truck)

A Mexican Favorite

Chilaquiles!

Brings back many memories-- definitely a comfort food.

Recipe:
Cut or tear corn tortillas in little squares (as if doing home made corn tortilla chips)
Fry in olive oil until a little crunchy
Add salt to your liking
Pour half a can of 'Hunts' tomato sauce or until all are slightly covered
take out and top with cheese, sour cream (or greek yogurt for a healthier option), avocado and home made salsa!
then ENJOY!

Tomato Soup

Went grocery shopping, stopped by Joe's recipe food, pit stop and just had to get it!  So yummy on a cold day.

Tomato & Roasted Red Pepper Soup
Monterey Jack cheese
Potato bread
SO YUMMY!

I'm sure you can make homemade tomato soup, I see it all over the blogosphere, but all that soup just for me (PJ wouldn't eat it).  Plus, it's good and instant! :)
